PINEAPPLE MARGARITA

It's National Margarita Day! I love a good margarita... don't you? Margaritas are often my go to drink. I love making them at home and even plan a margarita girls night out every couple months with my friends. What can I say, a big pitcher of margaritas, our favorite Mexican restaurant, and girl talk. I so look forward to these outings! While the girls nights out are awesome, why wait? I love making margaritas at home. I just do what I can to avoid the neon green pre-made mix found in stores... ick! I've found a couple organic mixes that aren't too bad, but making them with fresh real limes is so much better! While I love a good classic margarita, lately I've been making these super refreshing pineapple margaritas. 

Pineapple is the perfect addition to a citrusy drink like a margarita. National Margarita Day is the perfect excuse to whip up a couple of these delicious margaritas... but do we really need an excuse? 

I prefer my margaritas on the rocks with salt. So to get started, I cut open a lime and run it along the rim of my glass. The moister helps the salt stick to the glass. If that's not working for you, I often use sticky agave nectar on the rim of the glass to really get the salt to stick. I like a lot of salt but it's totally optional. Just pour some coarse kosher salt onto a plate and dip your glass in it, fill it with ice, and set it aside.

I don't know about you but I am so sick of the cold weather we've been having. Here in Missouri, the weather in February is all over the place. One day we will have 70 degree weather and the next day we are having an ice storm. Spring is right around the corner. I just wish it would get here a little faster. I think that is why I've been so obsessed with these pineapple margaritas lately. It reminds me of long warm spring and summer days. 

After my glass is ready and waiting, I cut up some pineapple for a garnish and filled my shaker with ice. Then it's time to start mixing all of the wonderfulness together! 

 To make it easy, I used a shot glass to measure out my ingredients and made them one at a time. If you are making these for a crowd, just use cup measurements instead to make a big batch of them. For the recipe, I didn't want the pineapple to over-power the fresh lime juice and other ingredients so I used two shots of pineapple juice. If you want a heavier pineapple flavor, bump up the pineapple juice a shot or two more. Also, if you are making more than one of these (which let's face it, of course you are), it's handy to squeeze the lime(s) ahead of time. Are you ready to make it yet? Below is the recipe! 


Ingredients: 

  • coarse Kosher salt (optional)
  • pineapple for garnish (optional)
  • 1 shot fresh lime juice (I got this from half of a large lime)
  • 2 shots pineapple juice
  • 1 shot silver tequila
  • 1/2 shot triple sec

Directions:

  1. Cut your lime in half and cut your pineapple into wedges for a garnish
  2. Rub the cut lime onto the rim of your glass and dip it in kosher salt. Fill your glass with ice, and set it aside.
  3. Fill a shaker with ice and add the lime juice, pineapple juice, tequila, and triple sec to it.
  4. Shake vigorously
  5. Pour the mixture into your glass and garnish with your pineapple.
  6. Enjoy!
