Caramel Puff Corn Recipe

Caramel puff corn is a holiday tradition in my house! We make this delicious treat every year and hand it out to neighbors, friends and family. It’s always a hit! Not to be mistaken with caramel popcorn, this treat is made with hull less popcorn so it doesn’t have the hard center. This treat is super buttery and covered in caramel! It has the whole salty, buttery and sweet combo going on. Need I say more?!

I honestly don’t really love caramel popcorn, I could take it or leave it… but this snack is on a level of it’s own. The outside gets a little crunchy as it bakes with the homemade caramel mixture on it but the inside is buttery and soft. It melts in your mouth.

Caramel Puff Corn Recipe For Christmas

Like I mentioned above, we make caramel puff corn for Christmas every year and it makes the perfect gift. I love to put it in little bags, add a cute personalized tag, and tie it up with string. You can find these tags in our shop! It’s not only super cute but it’s a surprisingly awesome treat! It also never fails that once we hand the puff corn out, we get several requests for the recipe.

Making caramel puff corn is not difficult at all. It only takes a few ingredients but it does need to bake for 45 minutes so you do need some time set aside to make this.

To start this recipe, gather up your ingredients. You''ll need brown sugar, light corn syrup, butter, baking soda, and buttered puff corn. It’s important that you buy “puff corn” and not pop corn. Puff corn is just a hull less popcorn but when baked with the caramel mixture, the texture comes out very different than popcorn. I buy this brand … just make sure not to buy the cheese flavored bag. You want the butter flavor.

Caramel Puff Corn Recipe

After I pull out my ingredients, I pour the buttered puff corn in two casserole baking dishes or roaster pans. In a sauce pan you will melt together your butter, brown sugar and corn syrup until it’s hot and bubbly and let it boil for a couple minutes. After that, you will stir in your baking soda. When you add in the baking soda, it will make the mixture foamy. Don’t be alarmed, it’s supposed to be like this!

Puff Corn Recipe

After you have the puff corn and caramel mixture combined, you’re ready to bake! You’ll bake for 45 minutes stirring every 10-15 minutes to get all of the piece coated evenly.

INGREDIENTS:

• 2 bags of butter puff corn (not popcorn)

• 2 sticks of butter 1/2 lb (don’t substitute margarine, you want real butter)

• 1 cup packed brown sugar

• 1/2 cup light corn syrup

• 1 teaspoon baking soda


DIRECTIONS:

  1. Pre-heat oven to 250 degrees

  2. Place your butter puff corn in two roasting pans and set aside

  3. In a medium saucepan combine butter, brown sugar, and corn syrup. Bring mixture to a boil and continue to boil for 2 minutes stirring constantly

  4. Add in the baking soda and stir until your mixture foams

  5. Remove caramel from heat and pour evenly over both pans of puff corn. Stir to combine

  6. Bake for 45 minutes stirring the puff corn every 10-15 minutes.

  7. After baking, dump the caramel covered puff corn onto parchment paper and break apart as needed. Allow to cool completely

  8. Enjoy!
