Margarita Ice Pop Recipe

Summer is in full swing here in Missouri and I have to say, this heat and humidity is crazy! This is nothing new for us, that’s just how Missouri summers go. The heat is one thing but the humidity is a whole other issue. For some reason it takes me by surprise every year. You’d think I’d get used to it being a life long MO resident but nope… Surprise, again!

Well, In an attempt to help cool down this summer (in a fun way), I’ve made these really yummy adult margarita ice pops! They are the perfect summer evening treat and will help cool ya down too. This recipe is a double batch recipe that makes both regular lime margarita ice pops and peach margarita ice pops! And man, are they good… and boozy!

Peach and Lime Margarita Ice Pop Recipe

I first made these a couple weeks ago for the 4th of July. We love the 4th of July around here and our whole neighborhood lights up the sky with a crazy amount of fireworks. We get together with neighbors on our block and hang out all evening. Other blocks in the neighborhood do the same. Between our neighborhood and the surrounding ones, there are fireworks in every direction. It’s really something to see. This year, I really wanted something fun to cool us down while we sat outside for hours playing with fire (or fireworks rather) and these were perfect!

THE ICE POP BAGS

At the beginning of the summer I found these ice pop mold bags on Amazon and I knew I had to have them! I didn’t know at the time what they would be used for but this turned out to be a great solution. These are the bags I used: Ice Popsicle Mold Bags. This purchase also came with a funnel. It came in handy pouring the liquid into the bags.

The ingredients consist of limes, peaches, frozen limeade concentrate, water, peach Schnapps, tequila, and agave nectar. You do also need a blender for the peach portion of the recipe. The recipe is for a full mixed batch of both lime and peach margarita pops… So make sure to divide the ingredients where noted in the recipe for each flavor. Or, if you want to make all peach or all lime ice pops, just use all of the posted ingredients for one batch and don’t divide. Just don’t add the peach or peach Schnapps for the lime recipe. The recipe is versatile, you do you!

LIME ICE POPS

I started off with the lime mixture first. You just mix the lime recipe ingredients together (excluding the peach and peach schnapps) and fill up your ice pop bags. Again, the recipe is for both flavors, so you will divide ingredients where stated in the recipe. My bags had a fill line to mark how much liquid to put in them. The pops will expand as they freeze so you don’t want to fill them up all the way or you will have a frozen sticky mess on your hands.

Lime Margarita Ice Popsicle recipe

I used a mason jar to stand up the bags as I poured the mixture into them. After I filled them up, I threw in some lime zest!

PEACH ICE POPS

The peach ice pops are made the same way except you will throw your chopped up peach, lime juice, and agave nectar into the blender to puree it before you add it to the pitcher with the rest of the liquid. It’s an extra step but the peach pops are well worth it!

And that’s it! Once they are frozen, you have these awesome margarita ice pops!

FREEZER TIME

Since these pops are pretty boozy (a little under a shot of alcohol per pop), it does take them a little while to freeze. I checked them at 5 hours and they were still pretty squishy… it was a slush/drink at that point. I actually liked them like that but freeze them longer to get a harder traditional ice pop.
